|4||Large Dempsters Whole Wheat Tortillas|
|1/4 cup||Extra Virgin Olive oil|
|1 1/2 tsp||curry powder|
|2 cups||cauliflower florets, cut into bite sized pieces|
|1 cup||Baby Spinach|
|1/4 cup||feta cheese|
|1/4 cup||finely chopped dried apricots (optional)|
Preheat oven to 400 degrees.
In a small bowl mix the olive oil with the curry powder until blended. Set aside In a large mixing bowl toss the cauliflower florets with the curry oil until evenly coated. Spread on a baking sheet and roast for 15 minutes. Let stand at room temperature for 5 minutes.
Lay a tortilla on a surface. Spread 2Tbsp hummus over the whole tortilla leaving a one-inch border. Place ¼ cup baby spinach along the bottom. Top with ¼ of the roasted cauliflower, and 1Tbsp each of feta and apricots if desired. Fold in the sides and roll up. Repeat with remaining tortillas.
