Served up nicely with Prime broccoli and cheese stuffed chicken.
1 lb | fresh brussel sprouts |
1 | onion (diced) |
4 | slices bacon |
6 | dried figs chopped |
2 tbsp | olive oil |
1 tsp | minced garlic |
Wash and trim ends of brussel sprouts. Blanch them in boiling water for about 3 min. Drain and transfer into a casserole dish. Add olive oil and garlic and stir to coat. Place covered casserole in 350F oven for 25 min. Fully cook bacon, remove from pan and cut into small pieces. Saute the onions in the bacon renderings, add figs and bacon pieces back in. Add the mixture to the brussel sprouts in the casserole dish and combine well. Bake for an additional 10 min.
