Adding bacon always makes kids eat their veggies! A hearty mix of winter veggies mixed together to make a wonderful side dish for any meal.
|4||rashers of bacon, diced|
|4 cups||brussel sprouts, halved|
|2||small onions, peeled, quartered|
|1||red pepper, seeded, sliced|
|1/2 cup||chopped flat leaf parsley|
|3 tbsp||vegetable oil|
|1 tsp||each of salt and ground black pepper|
Place all ingredients onto a parchment lined baking sheet. Bake in a preheated 400F oven for 30min. Turning every 10 min. to roast and colour evenly.
