Super easy meal to make and looks beautiful when done. Great for fall.
|1||Roasting Chicken (4ish lbs)|
|4||apples, peeled and cut into quarters|
|2||onions, peeled and cut into chunks|
|1||head of garlic, all cloves peeled|
|.5 cup||apple cider|
|pinches of sea salt and ground pepper|
|few springs fresh rosemary|
Preheat oven to 350 degrees F.
Mix all ingredients together minus the chicken. Place in a roasting pan large enough to fit the mixture and the chicken.
Season the chicken generously with the salt and pepper and place atop apple mixture (which you have already put into the roasting pan).
Pour cider into pan then pop it in the oven for about 20 minutes.
(meat themometer should show 180)
Take it out of the oven. You did it!
