About this Recipe

Caramelized roasted zucchini, potatoes and cauliflower flavoured with aromatic Indian spices make a great accompaniment to Maple Leaf Prime Butter Chicken and is ready in 30minutes!
It will fill your home with exotic delicious scents.
Just toss ingredients together and let the magic happen in your oven.

Ingredients

1 cauliflower, stem removed, florets separated
3 small onions, peeled, quartered
4 cloves of garlic, peeled, chopped large
1 tsp corriander seeds, cumin seed and turmeric powder
1 or 2 serrano chile peppers, minced
1 tsp ginger paste
1 lrg potato, peeled and cut into 6 pieces
1 tsp salt or to taste
3 tbsp olive oil or vegetable oil

Directions








Place everything on a parchment lined baking sheet. Toss to mix.
Place in a preheated 400F oven for 25-35 min. or until fork tender
Turn and toss after 15min for even colour.
Serve with heated through fully prepared Maple Leaf Butter Chicken

Notes

This makes a large amount and it's great for leftovers for lunch.
It can be eaten at room temp and is very transportable
