This roast chicken turns out golden and crispy on the outside and tender and juicy inside.


1 Maple Leaf Prime Naturally® Whole Chicken
1 Bulb garlic, halved
1 tbsp (15 mL) Paprika
2 tbsp (30 mL) Hoisin
1 tbsp (15 mL) Sesame oil
2 tbsp (30 mL) Honey
1 tbsp (15 mL) Lime juice
Salt and pepper


COMBINE paprika, hoisin, sesame oil, maple syrup and lime juice in a small bowl. Place chicken in a large re-sealable plastic bag and add marinade. Massage marinade into chicken and refrigerate for at least 30 minutes, and up to overnight.

PREHEAT oven to 450°F (230°C). Stuff garlic inside cavity of the chicken. Place chicken on a rack in a roasting pan, breast side down. Roast in preheated oven for 15 minutes. Turn chicken over. Reduce heat to 375°F (190°C) and roast for an additional hour, basting occasionally or until skin is golden and the internal temperature taken in the thickest part of the leg reaches 185°F (85°C). If skin gets too dark, loosely cover with foil during roasting. Allow to rest 10 minutes before carving.
