This roast chicken is so simply, even a new cook could make it quite easily. It is tender & delicious.


1 whole Chicken
1 tsp Cajun spice (optional)
1/2 Pkg Shake N Bake (or generic)


Preheat over to 400F.
Rinse chicken, remove organs from cavity. Sprinkle 1/2 the Cajun spice inside & on the neck. Sprinkle the rest of the Cajun spice over the back & on the wing tips. Sprinkle 1/2 a package of Shake & Bake (I use the "simply natural Chicken coating mix, available at Dollarama). Place chicken in roasting pan, add 1 liter of chicken broth (carton or home-made). Cover. Place in the preheated oven, set timer for 45 minutes. Baste chicken, return to over for another 25 minutes. Test by pulling on the drumstick, it should come away easily.
Boil potatoes while chicken is roasting & use the broth to make gravy.
In my experience, using chicken fat (saved from previous chicken meals) will make a much more flavourful gravy.
