Add more or less heat by varying the amount of chipotle you use in the mayo.

|4 buns or 8 slices of bread|
|1-2 tsps of chopped chipotle pepper|
|juice of 1/4 lime|
|havarti, montery jack, or cheese of choice|
|lettuce or mixed greens|
|2 roma tomatoes sliced thinly|
To make the chipotle mayo, take a few tbsps. of light mayo and put in a small bowl. Add juice of 1/4 lime and then as chopped chipotle to taste. Start with a little, then sample and add more until you have desired heat.
Preheat oven to 350. Place the roast beef and cheese on one half of bread or one slice of bread and heat until cheese has melted.
Assemble the sandwiches by spreading the chipotle mayo on both sides of bread/buns and then adding tomato and lettuce/greens.
