Tasty and filling quesadillas. Sun dried tortillias give it an extra taste.
|6||Dempster's sun dried tomato large tortillas (one package)|
|2 cups||shredded three cheese blend|
|2 tsp||vegetable oil|
|2 tsp||chili powder|
|1 tsp||ground cumin|
|2 cups||canned refried beans (16 oz can)|
|1/2 cup||diced onion|
|1/2 cup||sweet peppers|
|2 cups||mild salsa|
|1/4 cup||chopped cilantro|
|3/4 cup||sour cream|
|fresh ground pepper|
Over medium heat saute with oil and water saute onions and peppers until soft, about 5 minutes. Add chili and cumin. Add salsa, turn up heat and reduce until mixture has thickened. Add refried beans, reduce heat and continue to cook until mixture is thick, usually a few minutes or so.
Preheat oven to 375 degrees F.
For each tortilla spread 1/2 cup of bean mixture then 1/3 cup cheese. fold over in half. Place on non stick cookie sheet and bake for 10-12 minutes, turning once, until cheese is melted inside.
Cut in half. Spread 1 tbsp sour cream over each half, sprinkle with fresh ground pepper and chopped cilantro. Serve.
If you like it hot and spicy, you can use medium salsa.
