About this Recipe

This dish is a prefect side to serve at any family brunch. Use Maple Leaf® Ready Crisp Bacon Pieces to cut the preparation time in half!

Ingredients

1 tbsp (30 mL) Vegetable oil
½ tsp (2 mL) Ready prepared minced garlic
1 Clove garlic, minced
2/3 cup (175 mL) Diced red pepper
3 Green onions, chopped
2 ½ cups (625 mL) Frozen hash brown potatoes
1/3 cup (75 mL) MAPLE LEAF Ready® Crisp Bacon Pieces
Salt and pepper to taste

Directions

HEAT oil in a large non-stick skillet over medium-high heat. Add garlic, red pepper and green onion and sauté for 1 minute. ADD potatoes and bacon pieces and continue cooking, stirring occasionally, for 4 to 5 minutes or until potatoes are hot. Season to taste.
