|1||Tenderflake® Frozen Deep Dish Pie Shell, defrosted|
|1||Small red onion|
|3 tbsp||(45 m) Olive oil|
|Salt and pepper|
|2 tsp||(10 mL) Chopped fresh thyme|
|2 tbsp||(30 mL) Crumbled goat cheese|
PREHEAT BBQ to medium. Lightly coat the grill with oil.
SLICE all of the vegetables into ¼” (5 mm) slices. Lightly drizzle with olive oil and season with salt and pepper. Grill the vegetable slices until lightly char-grilled. Transfer to a tray to cool slightly.
PREHEAT oven to 375°F (190C).
REMOVE the pie shell from the foil tray and place on a lightly floured work surface. Using a lightly floured rolling pin, roll the pastry to a 12” (30 cm) circle.
ARRANGE the pastry on a parchment paper lined baking tray. Place the grilled vegetables on top in a circular fashion leaving a 1” (2.5 cm) border. Sprinkle with thyme and crumbled goat cheese. Fold the edges of the pastry in over the edges of the vegetables and bake for 22-25 minutes or until golden brown.
