About this Recipe

Grated cucumber, fresh mint and creamy yogurt make an amazingly refreshing salad when combined together!

Ingredients

1 English cucumber, grated
1 ½ cups (375 mL) Plain 1% probiotic yogurt
1 Tomato, finely chopped
¼ (0.25) Red onion, finely chopped
1 tbsp (15 mL) Fresh mint, finely chopped
½ tsp (2 mL) Sea salt
½ tsp (2 mL) Ground coriander seed
Pinch black pepper

Directions

DRAIN cucumber juice through a strainer. POUR yogurt into a bowl and add remaining ingredients; mix well. Refrigerate for 2 hours. GARNISH with a mint leaf before serving. SERVE this with our BBQ Tandoori Chicken
