These homemade Raisin Scones are both sweet and savoury - a delicious dessert perfect for lunch or brunch!
|2 cups||(500 mL) All-purpose flour|
|.5 tsp||(2 mL) Salt|
|.5 tsp||(2 mL) Baking soda|
|.5 tsp||(2 mL) Cream of tartar|
|.25 cup||(60 mL) Tenderflake® Lard|
|.25 cup||(60 mL) Sugar|
|.33 cup||(75 mL) Raisins|
|.66 cup||(150 mL) Milk|
|1 tsp||(5 mL) Fresh lemon juice|
PREHEAT oven to 425°F (220°C).
MIX together flour, salt, baking soda and cream of tartar in a large bowl. Cut in lard with a pastry cutter or gently with finger tips until mixture resembles coarse oatmeal. Stir in sugar and raisins.
MAKE a well in centre of mixture and pour in milk and lemon juice. Mix to a soft dough and turn out onto a lightly floured work surface. Knead lightly until smooth. Roll out to a ½ inch (1 cm) thickness. Cut out rounds, using a 2 inch (5 cm) cookie cutter. Gather remaining dough together and cut out more rounds. Place scones on a baking sheet.
BAKE in preheated oven for 10 to 15 minutes or until golden brown. Cool scones on a wire rack.
