This salad is packed with protein and punch! Quinoa packs important antioxidants, protein and magnesium to maintain your physical health.


4 cups (1 L) Cooked quinoa
2 cups (500 mL) Maple Leaf Prime® roasted turkey, diced
1 Red delicious apple, cored and diced
1 Fennel bulb, diced
1 cup (250 mL) Diced Asiago cheese
1 cup (250 mL) Pecans or walnuts, toasted and chopped
½ cup (125 mL) Dried cranberries
1 tsp (5 mL) Dijon mustard
¼ cup (60 mL) Apple cider vinegar
2 tbsp (30 mL) White balsamic vinegar
1 tbsp (15 mL) Maple syrup
? cup (80 mL) Olive oil
Salt and pepper
3 cups (750 mL) Arugula


MIX together cooked quinoa, turkey, apple, fennel, cheese, pecans and cranberries in a large bowl. WHISK together the next five ingredients for vinaigrette. Drizzle over the quinoa mixture. Toss to coat. Just before serving toss with arugula, season with salt and pepper to taste and serve.
