About this Recipe

This is a healthy Quinoa Salad that I make for my family. It's an excellent side dish.


1.5 cups Rinsed Qunioa
3 cups Chicken Broth
1/8 cup lemon juice
1/8 cup lime juice
.5 tsp sea salt
.25 cup Olive Oil
.5 cucumber
.25 yellow pepper
.25 orange pepper
.25 red pepper
5 green onions
.25 cup fresh parsley
.25 cup feta cheese


In a saucepan bring broth to a boil. Add quinoa and a pinch of salt. Reduce heat to low, cover and simmer for 15 minutes. Allow to cool to room temperature; fluff with a fork.
Meanwhile, in a large bowl, combine olive oil, sea salt, lemon juice, lime juice, cucumber, green onions, peppers, feta and parsley. Stir in cooled quinoa.
