This Quinoa burger is not only healthy but delicious too! Goes well with a nice chilled glass of beer! The burger can be made ahead of time and heated just before making the sandwich.
|1/2 cup||Veg Quinoa|
|1||Small Shallot Finely Chopped|
|1||Clove of Garlic Minced|
|2 tbsp||Feta Cheese Crumbled|
|2 tbsp||Chopped Cilantro|
|1/4 tsp||Cayenne powder|
|2||Red Onion slices|
|2 tbsp||Avocado dressing|
|A Few Baby Spinach and or Arugula|
Cook quinoa according to package directions and transfer to a large bowl.
Heat a little oil in a frying pan and add the garlic and shallot. Cook until soft. Add to the quinoa. Stir in egg, breadcrumbs, cayenne and salt.
Heat some more oil in the same non-stick frying pan. Gently form 3 quinoa patty and fry until nice and golden on both sides.
Toast a bun and put some butter on it. Layer it with the quinoa burger, avocado dip, tomato, onion slices and the greens. You can add any other topping you like.
