A quick Reuben sandwich to enjoy for breakfast on St. Patrick's Day.
|1||Whole Grains English Muffin|
|4 oz||cooked corned beef, sliced thinly from deli section|
|4 tbsp||sauerkraut, squeezed to remove excess liquid|
|1||thick slice of Swiss or Mozzarella Cheese|
|2 tbsp||mayonnaise or Thousand Islands dressing|
Spread mayo on both halves of muffin. On one half, place sauerkraut topped with cheese. On the other half, pile corned beef. Place both on a cookie sheet lined with foil and broil for about 2 - 3 minutes until the cheese melts. Put them together and top of the mornin' to ya!
