This will be great for the game or anytime. You can use leftover chicken or buy precooked sliced chicken to make this quick and delicious sandwich.
|6 oz||cooked chicken|
|6||slices green pepper|
|2||slices mozzarella cheese|
|2 tbsp||grated parmesan|
|1 tbsp||olive oil|
|1/2 cup||Pizza or spaghetti sauce|
Sauté onions and mushrooms in oil for 2 min, add peppers and continue to cook for 2 min.
Heat the sauce in the microwave.
Slice the bun and spread a spoonful of sauce on the inside of the bottom piece. Stack the sliced chicken on it, and sprinkle a tablespoon of parmesan onto it, then add the veggies. Spoon the sauce over the top and sprinkle the other tablespoon of parmesan then add the mozzarella.
Place on a baking sheet in the oven on 400 for 1-2 min to melt the cheese if desired.
Add the top of the bun and devour.
