A quick faux hollandaise made this delicious in under 10 min. This is delicious but it is not an on the go sandwich. Try this on the weekend when you can eat at a table with a plate.


1 Dempsters English muffin
1 tbsp mayonaise
1 tbsp sour cream
1 tbsp cold butter cut into small chunks
3 drops of lemon juice
1 pinch Cayenne powder
1 egg
1 slice of ham


in a small dish combine mayo and sour cream. Microwave for about 30 seconds then stir in cold butter until smooth, add lemon juice and pinch of cayenne. Mixture should be warm but not hot.
Heat a small Teflon pan to medium with a few tablespoons of water in it. Crack the egg in and put a lid on it. Cook with lid on until the steam turns top opaque but not hard (about 3 min).
Toast English muffin and assemble ham on lower half. Place egg on top and pour a few spoonfuls of the faux hollandaise over it then assemble with top half.


The faux hollandaise makes enough for 2-4 sandwiches. You could also use bacon instead of ham if you prefer to change it up.
