Delicious chicken and artichoke dish to make when you're in a hurry! Totally yummy but done in fifteen minutes!
|2 tbsp||(30 mL) Olive oil, divided|
|1 Pkg||Maple Leaf® Prime® Naturally Thin Sliced Chicken Breast|
|Salt and pepper|
|2||Small red onions, cut in wedges|
|2||Cloves garlic, thinly sliced|
|1/2 cup||(125 mL) Chicken broth|
|1 tsp||(5 mL) Greek seasoning|
|1/4 cup||(60 mL) Crumbled Feta cheese|
|1||(14 oz/398 mL) Can artichokes, drained and cut into wedges|
|1/4 cup||(60 mL) Sliced roasted red peppers|
|1/3 cup||(80 mL) Pitted Kalamata olives|
HEAT 1 tbsp (15 mL) olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper and cook for 3-4 minutes per side, until golden brown. Remove from pan and set aside. Heat remaining oil in pan and add onion and garlic. Cook 1-2 minutes and return chicken to the pan along with chicken broth. Season with Greek seasoning and add artichokes, peppers and olives to the skillet. Heat through to ensure the chicken is cooked and the internal temperature reaches 165°F (74°C). Sprinkle with crumbled Feta cheese and serve.
