Ingredients

3 lb (1.4 kg) Beef brisket
8-10 Dempster’s® Original Bagels
SPICE RUB:
1/2 tsp Kosher salt
1/2 tsp Pepper
1 tbsp Paprika
1/2 tsp Cayenne
1/2 tsp White pepper (optional)
1 tsp Garlic powder
1 tsp Onion powder
1/2 tsp Dried thyme
1/2 tsp Dried oregano
BARBECUE SAUCE:
2 tsp Vegetable oil
1/2 Small onion, finely chopped
2 Cloves garlic, minced
1 tsp Tomato paste
1 tsp Worcestershire sauce
1 tsp Soy sauce
2 tsp Balsamic vinegar
3 tbsp Brown sugar
1 cup Ketchup
1/2 tsp Dried oregano
Salt and pepper
CREAMY COLESLAW:
2 cups Shredded cabbage
1/2 cup Grated carrot
1/4 cup Chopped fresh cilantro
3/4 cup Mayonnaise
1/4 cup Sugar
1 1/2 tbsp Vinegar
Salt and pepper

Directions

SPICE RUB:
COMBINE all of the ingredients in a small bowl. Rub all over brisket and refrigerate overnight.

PREHEAT oven to 325°F (160°C). Transfer the brisket to a roasting pan. Add one cup (250 mL) of water or beer to the pan. Cover with lid or aluminum foil and roast in preheated oven for 3-4 hours or until meat is falling apart. Remove brisket from the oven and allow to cool enough to handle.

BARBECUE SAUCE:
HEAT oil in a small saucepan over medium heat. Add onions and garlic. Sauté for 1-2 minutes then stir in remaining ingredients. Reduce heat to low and simmer for 5-10 minutes. Set aside until ready to use.

CREAMY COLESLAW:
Toss all of the ingredients together in a bowl. Mix well and refrigerate until ready to use.

PULLED BEEF BRISKET:
SHRED the brisket using two forks. Toss with the barbecue sauce and heap onto toasted bagels. Top with creamy coleslaw and the other bagel half.
