Flaky puff pastry topped with vanilla flavoured custard and sprinkled with icing sugar before serving!
|1||(397 g) Package Tenderflake® Frozen Puff Pastry, thawed overnight in refrigerator|
|5||Eggs, room temperature|
|1.5 cups||(375 mL) Sugar|
|.5 cup||(125 mL) All-purpose flour|
|2 cups||(500 mL) Whole milk (3.25%)|
|1 tsp||(5 mL) Pure vanilla extract|
|7 tbsp||(105 mL) Unsalted butter, softened|
|Icing sugar for dusting|
PREHEAT oven to 375°F (190°C). Line 2 baking sheets with parchment paper.
ROLL one square (1/2 pkg) of pastry on a lightly floured surface into a 6 x 9 inch (15 x 23 cm) rectangle. Cut each rectangle 3 times crosswise and lengthwise making nine 2 x 3 inch (5 x 8 cm) pieces. Repeat with second half of pastry. Place on baking sheets and prick all over with a fork. Bake in preheated oven for 10 - 15 minutes or until golden brown. Allow to cool on a wire rack.
WHISK together eggs, sugar and flour in a medium saucepan. Whisk in milk and place over medium heat. Cook, stirring constantly, until mixture thickens into custard. Stir in vanilla and remove from heat. Cool to room temperature. When almost cool, stir in butter 1 tbsp (15 mL) at a time.
ASSEMBLE slices by placing one piece of puff pastry on a serving plate. Spread with custard, cover with second piece of pastry, spread with custard and top with a third piece of pastry. Repeat with remaining pastry and custard to make 6 slices in total. Dust with icing sugar just prior to serving.
