Ingredients

24 Extra large shrimp, peeled
1 tbsp (15 mL) Olive oil
Salt and pepper
12 Slices Cappola® Prosciutto, cut in half lengthwise
2 tbsp (30 mL) Chopped fresh cilantro or parsley
1 Lime, cut into wedges
DIPPING SAUCE:
1 tbsp (15 mL) Italian salad dressing
1/2 tsp (2 mL) Smoked paprika
1 tbsp (15 mL) Olive oil
2 tbsp (30 mL) Lime juice
Pinch of salt
1/4 tsp (1 mL) Chili flakes

Directions

PREHEAT oven to 400°F (200°C).

TOSS shrimp, olive oil, salt and pepper in a medium bowl. Wrap each shrimp in a piece of prosciutto and arrange on a parchment paper lined baking sheet.

WHISK together all of the ingredients for the dipping sauce. Lightly brush the shrimp with the sauce.

BAKE shrimp in preheated oven for 5-6 minutes per side, brushing with more sauce after turning. Shrimp is cooked when it is firm and white throughout. Transfer shrimp to a serving platter and sprinkle with fresh herbs and garnish with lime wedges. Serve with the remaining sauce.
