Italian style prosciutto, artichoke, asiago cheese, and arugula, combine to make a crisp quesadilla with a cheesy and chewy inside.
|1 cup||(250 mL) Marinated artichokes, drained and quartered|
|1.5 cups||(375 mL) Grated Asiago cheese|
|1||(175 g) Package Cappola™ Proscuitto, coarsely chopped|
|4||Small Dempster’s® Original Tortillas|
|1 cup||(250 mL) Arugula|
PLACE tortillas on a clean work surface. Divide cheese equally on one half of each tortilla. Top cheese with artichokes and prosciutto. Fold in half and brush both sides lightly with olive oil.
HEAT a large skillet over medium high heat and cook about 3 minutes per side or until golden brown. Remove from pan and immediately open and sprinkle ¼ cup (60 mL) of arugula inside each one before serving.
