Prosciutto, Provolone and Rapini Grilled Cheese

A superb combination of ingredients and flavours makes this the ultimate gourmet grilled cheese.

Ingredients

1 Bunch rapini, stems trimmed
1 Clove garlic, thinly sliced
.5 tsp (2 mL) Chili flakes
Salt to taste
8 Slices California Goldminer® Sourdough Cracked Wheat square
8 Slices Provolone cheese
8 Slices prosciutto, roughly chopped
.5 cup (125 mL) Roasted red pepper strips
Olive oil

Directions

BRING a large pot of salted water to a boil. Add rapini and blanch for 2-3 minutes. Remove from the water and plunge into ice water to stop cooking. Drain well.

HEAT oil in a large skillet over medium-high. Add garlic and cook one minute or until fragrant. Add rapini and chili flakes. Season with salt. Stir-fry for two minutes or until heated through.

DIVIDE the cheese between four slices of bread, top each with prosciutto, rapini, roasted peppers and remaining slice of bread.

BRUSH olive oil over the outside of each sandwich.

GRILL sandwiches in a large non-stick skillet over medium high until cheese is melted and the outside is golden brown, about 2-3 minutes per side.
