you can take off the skin before cooking to lessen the fat
when I do that I made the skin crunchy by drying it and cook in deep fried it's a great appetizer but have to watch out for cholesterol a little consumption if fine.. I'm still healthy

Ingredients

maple leaf primechicken
patola (gourd)
chinese cabbage
leaves of chilli
fish sauce (optional)
litter of water

Directions

saute onion, ginger, garlic and add chicken on a big casserole
cook till the chicken a bit brown
add litter of water

wait till boiling , and cooked .. add the vegetables and chilli leaves at the end

Notes

it's a soup that help ypu get through with your colds and flu
