Fresh and delicious, these lettuce cups make for a great lunch or dinner.
|1 lb||Maple Leaf Prime® Ground Turkey|
|1 tbsp||(15 mL) vegetable oil|
|1||small onion, diced|
|1/2 cup||(125 mL) carrot, cut into thin match sticks|
|1||small red pepper, diced|
|1/4 cup||(60 mL) peanuts, roughly chopped|
|4 tbsp||(60 mL) soy sauce|
|3 tbsp||(45 mL) oyster sauce|
|1 tbsp||(15 mL) sambal|
|1 tbsp||(15 mL) honey|
|1 tbsp||(15 mL) ginger, minced|
|1 tbsp||(15 mL) garlic, minced|
|1 tbsp||(15 mL) rice wine vinegar|
|Juice of 2 limes|
|2 tbsp||(30 mL) cilantro, chopped|
|4||leaves of boston bibb or head lettuce|
HEAT vegetable oil in a large skillet over medium high heat.
COOK turkey breaking apart with the back of a wooden spoon until browned, about 6 to 7 minutes.
ADD onion and pepper.
COOK for 3 to 4 minutes longer or until vegetables are softened.
ADD soy sauce, oyster sauce, sambal, honey, ginger, garlic, rice wine and lime juice.
STIR well to combine cooking for 1 to 2 minutes.
SEASON with salt and pepper.
DIVIDE the mixture and gently spoon into lettuce cups.
GARNISH with carrots, nuts and cilantro.
Try serving with cucumber infused ice water.
