A delicious and refreshing seasonal salad made especially for spring! Perfect for any outside group gathering in sunny weather!
|1 tbsp||(15 mL) Olive oil|
|1||Package Maple Leaf Prime Naturally® Portions Stir Fry|
|1 lb||(450 g) Asparagus|
|6||Hard boiled eggs, sliced|
|2 cups||(500 mL) Baby spinach or kale|
|3 cups||(750 mL) Quartered strawberries|
|1 cup||(250 mL) Feta cheese, crumbled (optional) Vinaigrette|
HEAT oil in a large skillet over medium-high. Season chicken with salt and pepper. Add to the pan and cook, stirring occasionally for 10-12 minutes or until golden brown and cooked to an internal temperature of 165°F (74°C). Remove from the pan and allow to cool.
ADD four cups of salted water to the same pan. Cover and bring to a boil. Add asparagus and cook, uncovered for 2-3 minutes or until tender crisp. Remove from the pan and allow to cool.
ASSEMBLE the salad on a platter with each ingredient lined up next to one another. Drizzle with vinaigrette. Toss just prior to serving.
