This southwest inspired meat loaf is a delicious twist on a meat loaf!
|1||Maple Leaf Prime® Ground Turkey|
|1 cup||(250 mL) grated cheddar cheese, divided|
|1||small onion, grated|
|1/3 cup||(75 mL) red pepper, diced|
|1/3 cup||(75 mL) green pepper, diced|
|1 cup||(250 mL) corn|
|2 tbsp||(30 mL) garlic, minced|
|2 tbsp||(30 mL) chili powder|
|1 tbsp||(15 mL) onion powder|
|1 tbsp||(15 mL) paprika|
|1 1/2||(375 mL) BBQ sauce|
|Crispy onion straws – optional|
PREHEAT oven to 400 degrees.
IN a large bowl combine ground turkey, half the cheddar cheese, peppers, onions, corn, garlic, chili powder, onion powder and paprika.
FORM mixture into a loaf and place on a parchment lined baking sheet.
POUR BBQ sauce over top and spread to coat evenly.
BAKE for 30 minutes or until meat loaf reaches in internal temperature of 165 degrees.
ALLOW meat loaf to rest 5 minutes before slicing.
GARNISH with remaining cheddar cheese and onion straws if using.
Try adding jalapeno for a little heat.
