Delicious scaloppini made with Maple Leaf Prime™ chicken breasts.

|2 tsp||Olive oil|
|1||Small onion, finely diced|
|1 tsp||Chopped fresh rosemary|
|1 tsp||Dried oregano|
|1||Clove garlic, minced|
|1/3 cup||Fresh bread crumbs|
|1/3 cup||Grated parmesan cheese|
|2 tsp||Chopped fresh parsley|
|2||Medium vine ripened tomatoes|
PREHEAT oven to 400°F (200°C).
ARRANGE frozen chicken breasts on a parchment paper or aluminum foil lined baking sheet, leaving room for 4 tomato halves; bake for 15 minutes.
HEAT oil over medium heat in a small skillet; sauté onion, rosemary and oregano until onion is transparent. Add garlic and sauté for 1 minute.
REMOVE from heat and add bread crumbs, Parmesan and parsley. Cut each tomato in half and top with bread crumb mixture.
PLACE tomatoes on baking sheet with chicken and bake for 20 minutes or until chicken reaches an internal temperature of 170°F (77°C).
