An all time favourite! Great to make ahead and have on hand for surprise guests, make two at a time, one for tonight and one for the freezer!
|1 tbsp||Olive oil|
|1 1/2 lbs||Maple Leaf Prime Naturally® Extra Lean Minced Turkey|
|1||Medium onion, diced|
|3||Cloves garlic, minced|
|1 tbsp||Tomato paste|
|4 cups||ready prepared Marinara sauce|
|Salt and pepper|
|1 tsp||Italian seasoning|
|12||Lasagna noodles, cooked and drained|
|1 lb||Ricotta or Cottage cheese|
|2 tbsp||Chopped fresh herbs, optional (parsley, thyme, basil)|
|4 cups||Grated Mozzarella cheese|
|3/4 cup||Grated Parmesan cheese|
PREHEAT oven to 375°F (190°C).
HEAT oil in a large skillet over medium-high. Add turkey and cook, breaking apart with a wooden spoon for 6-8 minutes. Add onion and garlic. Cook 3-4 minutes and stir in tomato paste. Continue to cook for another 1-2 minutes. Add Marinara sauce and Italian seasoning. Season to taste with salt and pepper. Reduce heat to low and simmer, covered for 15-20 minutes.
USING a 9x13” (3.5 L) baking dish, spread a thin layer of meat sauce over the bottom. Arrange a layer of lasagna noodles over top. Spread another layer of meat sauce over the pasta.
WHISK together egg, Ricotta and herbs. Dot the sauce with the Ricotta mixture, spreading evenly over the meat sauce. Sprinkle with a layer of Mozzarella cheese and Parmesan. Repeat these layers, topping lasagna with meat sauce and a layer of grated cheese.
COVER with aluminum foil and bake in preheated oven for 25 minutes. Remove foil and bake for an additional 15 minutes.
COOL for 10-20 minutes prior to serving.
Can be prepared and frozen before baking. Bake covered from frozen for 1 hour or until heated through, then bake an additional 15 minutes uncovered.
