Another family favourite simplified by using Maple Leaf Prime Naturally® Thin Slice Chicken Breast. Simply bread with crispy coating and prepare.
|1/2 cup||(125 mL) Flour|
|Salt and pepper|
|2 tbsp||(30 mL) Water|
|3/4 cup||(175 mL) Panko breadcrumbs|
|1 tbsp||(15 mL) Italian seasoning|
|1/4 cup||(60 mL) Finely grated Parmesan cheese|
|1||Package Maple Leaf Prime Naturally® Thin Slice Chicken Breast|
|1/2 cup||(125 mL) Vegetable oil|
|3/4 cup||(175 mL) Ready prepared marinara sauce|
|1/2 cup||(125 mL) Grated Mozzarella cheese|
SET up breading station by placing flour seasoned with salt and pepper in a shallow dish. Beat eggs and water together in another shallow dish. Combine panko, Italian seasoning and Parmesan in a third shallow dish.
DREDGE chicken in flour. Shake off any excess. Dip into egg mixture and then coat with breadcrumbs.
PREHEAT broiler to high.
HEAT oil in a large skillet over medium-high heat. Fry chicken for 2-3 minutes per side, or until golden brown and the internal temperature reaches 165˚F (74˚C). Place on a baking sheet and spoon marinara over each piece of chicken. Top with grated Mozzarella and place under preheated broiler until cheese has melted. Garnish each with fresh basil.
Panko breadcrumbs are flakier than traditional breadcrumbs making for a crispier coating. They are readily available at your local supermarket.
Serve over pasta with marinara sauce or as a sandwich on a ciabatta bun.
