These tasty chicken meatballs are sure to be a big hit! The added cheese and herbs give them big flavour and there are so many ways to serve them!
|1 lb||(454 g) Maple Leaf Prime Naturally® Extra Lean Ground Chicken|
|1/4 cup||(60 mL) Freshly grated Parmesan cheese|
|1/3 cup||(80 mL) Grated Mozzarella or Provolone cheese|
|2 tbsp||(30 mL) Chopped fresh herbs (parsley, basil, thyme)|
|3||Cloves garlic, minced|
|Salt and pepper|
|1 tbsp||(15 mL) Olive oil|
|1||(650 mL) Jar ready prepared Marinara sauce|
GENTLY mix together, chicken, egg yolk, Parmesan, Mozzarella, herbs, garlic, salt and pepper in a large bowl using your hands.
FORM into 1” (2.5 cm) meatballs. Heat oil in a large skillet over medium-high. Working in batches, add meatballs to the pan being careful not to overcrowd. Brown on all sides. Continue with the remaining meatballs.
POUR Marinara sauce into the same pan and add all of the meatballs back into the pan. Bring to a boil then reduce heat and simmer the meatballs in the sauce for about 15 minutes or until cooked through and the internal temperature reaches 165°F (74C).
Serve over pasta or spaghetti squash or in a meatball sub.
