Fantastic Mexican flavoured fajitas and no kit required.
|.25 cup||(60 mL) Lime juice|
|1||Clove garlic, minced|
|1 tsp||(5 mL) Cumin|
|1 tsp||(5 mL) Oregano|
|.25 tsp||(1 mL) Chili flakes|
|.5 tsp||(2 mL) Paprika|
|4 tbsp||(60 mL) Olive oil, divided|
|1||Package Maple Leaf Prime Naturally® Thin Sliced Chicken Breasts, cut into strips|
|1||Yellow pepper, sliced|
|1||Red pepper, sliced|
|1||Small zucchini, cut into strips|
|.33 cup||(75 mL) Salsa|
|Salt and pepper|
|1||Package Dempster’s® Original Small Tortillas|
|4||Green onions, cut into strips|
PLACE lime juice, garlic, cumin, chili flakes, paprika and 2 tbsp (30 mL) olive oil in a large re-sealable plastic bag. Add chicken and massage marinade into the chicken. Refrigerate for 1-2 hours.
HEAT 1 tbsp (15 mL) olive oil in a large skillet over medium-high heat. Add chicken, discarding marinade and cook for 8-10 minutes or until golden brown and the internal temperature has reached 165°F (74°C). Remove from skillet and set aside.
HEAT 1 tbsp (15 mL) olive oil in the same skillet. Add vegetables and stir-fry for 3-5 minutes or until tender crisp. Return chicken to the skillet and add salsa, salt and pepper. Stir to combine and remove from heat.
SPOON fajita mixture into the center of each tortilla. Add green onions and fold tortillas to secure the filling.
