|1 Pkg||Maple Leaf® Prime® Naturally Chicken Breast Fillets|
|2 cups||(500 mL) Pretzels|
|1/2 cup||(125 mL) Flour|
|Salt and pepper|
|HONEY MUSTARD DIPPING SAUCE:|
|1/2 cup||(125 mL) Mustard|
|1/4 cup||(60 mL) Honey|
|2 tbsp||(30 mL) Mayonnaise|
CUT each chicken fillet into bite-sized pieces. Set aside. Place pretzels in food processor and pulse into crumbs, transfer to a shallow bowl. In a separate shallow bowl mix flour with salt and pepper. Whisk eggs together in another bowl.
DREDGE chicken first in flour, shake off the excess, dip in egg, then in pretzel crumbs. Place each piece on a baking sheet.
HEAT 1½” (4 cm) oil in a large skillet over medium-high to 350°F (180°C). Working in batches fry chicken pieces 2-3 minutes per side or until golden brown and the internal temperature reaches 165°F (74°C).
HONEY MUSTARD DIPPING SAUCE:
WHISK all of the ingredients together in a small bowl.
Serve on the side for dipping.
For a healthier version the chicken can be baked in a 375°F (190°C) oven for 18-20 minutes.
