Potato, Bacon and Tomato Salad with Fresh Bocconcini and Sweet Peas

Serves 6.

Ingredients

2 Pkg President’s Choice Mixed Little Gems Yellow, Red and Blue Mini Potatoes
1 Pkg Maple Leaf Bacon
2 cups cherry or grape tomatoes
200 g President's Choice Cocktail Bocconcini Soft Fresh Cheese
1 cup fresh sweet peas
4 tbsp olive oil
salt and pepper to taste

Directions

Cook potatoes until tender (we microwaved them on high for 10 minutes), then barbecue for 5 to 10 minutes until the skin is golden brown. Set aside to cool.

Cook bacon per package instructions, then tear or slice into bite-sized pieces.

Drain the bocconcini.

Toss all ingredients together in a large bowl.
