|1||large portabella mushroom cap|
|4 tbsp||chopped onion|
|1 oz||blue cheese cut in small pieces|
|1 tbsp||olive oil|
|4 tbsp||red wine|
Remove the stem from the mushroom. chop the stem and set aside with the chopped onion.
In a skillet with the olive oil on med heat, place the mushroom fin side down and cook for about 5 min. Flip it over. cook for 2 min then add the onions and mushroom stems to the pan, beside the mushroom cap. Add a little more olive oil if needed. Cook for another 3 min.
Put the pieces of blue cheese onto the mushroom cap and poor the wine over it. Place a lid on it and let it cook for 1 min.
Take the mushroom cap out onto plate and pour the onion mixture over the top of it.
