Pork Souvlaki with Grilled Pitas

About this Recipe

This dish is a flavourful must-have main for any Greek-inspired menu. Marinated and tender pieces of pork are kicked up a notch with fresh herbs and zesty citrus juice.

Ingredients

SOUVLAKI:
2 lbs (1 kg) Pork tenderloin
1 Yellow pepper, cut into 1 inch (2.5 cm) pieces
1 Red pepper, cut into 1 inch (2.5 cm) pieces
1 Green pepper, cut into 1 inch (2.5 cm) pieces
½ cup (125 mL) Olive oil
2 tbsp (30 mL) Lemon juice
2 Cloves garlic, minced
2 tsp (10 mL) Chopped fresh oregano
Salt and pepper
PITAS:
1 Package Dempster’s® Pocketless Pitas
3 tbsp (45 mL) Olive oil
1 Clove garlic, minced
1 cup (250 mL) Ready prepared tzatziki dip

Directions

TRIM any fat or silverskin from pork. Cut into bite-size pieces and place in a large re-sealable plastic bag. Add peppers to bag. MIX olive oil, lemon juice, garlic, oregano and salt and pepper together in a small bowl. Pour over pork and peppers and marinate a minimum of 1 hour and up to 4 hours in the refrigerator. PREHEAT BBQ to medium-high heat. THREAD pork and peppers onto skewers, alternating meat with peppers. Discard marinating liquid. Lightly coat grill with non-stick cooking spray and grill souvlaki for 8-10 minutes, turning occasionally until pork reaches an internal temperature of 160°F (71°C). Remove from grill and allow to rest 5 minutes. COMBINE olive oil and garlic in a small bowl. Brush both sides of pitas and place on grill. Grill both sides until warmed through and light grill marks appear. SERVE souvlaki with grilled pitas and tzatziki.
