An excellent recipe for any special occasion.
|4||Maple Leaf Prime® Portions Boneless Pork Chops|
|2 tbsp||(30 mL) Vegetable oil, divided|
|.5||Medium onion, minced|
|.5||Rib of celery, minced|
|1.5 tbsp||(22 mL) Dried cranberries|
|.5||Apple, peeled, cored and diced|
|1 tsp||(5 mL) Chopped fresh sage|
|2||Slices white bread, cut into ½” (1.25 cm) cubes|
|2 tbsp||(30-45 mL) Chicken broth|
PREHEAT oven to 350°F (180°C).
CUT a deep horizontal pocket in the outside edge of each pork chop. Season with salt and pepper and set aside.
HEAT 1 tbsp (15 mL) of oil in a large non-stick skillet over medium heat. Add onion, celery, apples and cranberries. Cook for 5-7 minutes or until tender. Transfer mixture to a medium bowl. Mix fresh sage, bread and chicken broth. Season with salt and pepper to taste.
STUFF and equal portion of the mixture into each of the pork chops. Clean the skillet and add the remaining oil to medium-high. Sear the pork chops on each side for 2-3 minutes or until evenly browned.
TRANSFER to a shallow baking dish and roast in preheated oven for 10-12 minutes or until the internal temperature reaches 160°F (71°C).
Suggestions: Serve with potatoes and your favourite vegetable.
