|1 Pkg||Schneider’s® Country Natural Honey Ham, diced|
|4||large sweet potatoes, diced ½ inch thick|
|1/2 cup||(120 ml) mayonnaise|
|1 tbsp||(15 ml) poppy seeds|
|2 tsp||(5 ml) grainy mustard|
|2 tbsp||(30 ml) apple cider vinegar|
|1 tbsp||(15 ml) honey|
|1||small red onion, diced|
|2||green apples, diced|
In a large pot of cold salted water, add the sweet potatoes and bring to a boil. Cook the potatoes until they are fork tender and fully cooked (about 10 minutes). Once cooked, strain and allow them to dry and cool.
In a separate boil, add all of the remaining ingredients and mix well. Add the cooled sweet potatoes and season to taste. Serve warm or cold.
