|4 cups||(1 L) Popcorn|
|1 cup||(250 mL) Bread crumbs|
|1 tbsp||(15 mL) Sugar|
|1 cup||(250 mL) Flour|
|2 tbsp||(30 mL) Smoked paprika|
|1/4 tsp||(1 mL) Pepper|
|1/2 tsp||(2 mL) Salt|
|2 tbsp||(30 mL) Milk|
|1||Package Maple Leaf Prime Naturally® Chicken Breast Fillets|
|1/2 cup||(125 mL) Vegetable oil|
PLACE popcorn in a food processor and pulse until fine crumbs form – similar to breadcrumb consistency.
MIX together the popcorn with breadcrumbs and sugar and place in a shallow bowl.
MIX flour, paprika, salt and pepper and place in a second shallow bowl.
Lightly beat the eggs with milk or water and place in the third shallow bowl.
DIP each chicken fillet into the flour, then egg and finally the popcorn mixture. Dip back into the egg, then again in the popcorn to coat well. Gently press to help the crumbs adhere to the chicken. Repeat with remaining fillets.
HEAT oil in a large skillet over medium-high heat. When oil is very hot and glistening add chicken fillets. Fry for 3-4 minutes per side or until golden brown and the internal temperature reaches 165°F (74°C).
Remove chicken from oil and sprinkle with a little more salt and drizzle with melted butter.
Serve with your favourite dipping sauce.
