Last year I made my own canned poached pears, and we are still finding fun ways to eat them throughout the year.
|4||Flatbread (Naan bread works well, too)|
|1 cup||premade basil pesto|
|1||large onion, chopped|
|1 tbsp||olive oil|
Pre-heat oven to 375.
In a medium frying pan, heat oil and butter on medium high heat. Add onions. Cook until onions turn brown and start to carmelize.
On a cookie sheet, place flatbread (plain Naan bread works well for this as well).
Spread 1/4 cup of pesto on the surface of each flatbread.
Top with thinly sliced pieces of brie, carmelized onions, and thin slices of poached pears*.
Bake for 10-15minutes until brie starts to melt.
*You can purchase the poached pears pre-made at the store, or make your own. For my poached pears I used water (though you can use juice or wine for your liquid if you prefer), cinnamon, nutmeg, allspice, honey, and a little ginger. Simply put, you just boil halved/cored pears in this infusion and they take on the flavour. These are great to have on hand for sweet & savoury dishes
