1 tbsp (15 mL) Vegetable oil
3 Maple Leaf Prime Naturally® Boneless Skinless Chicken Breasts, cut into bite sized pieces
1 Onion, chopped
1 Large carrot, sliced on the bias
1 Red pepper, chopped
1 Yellow pepper, chopped
2 Green onions, cut into 1” (2.5 cm) pieces
1 cup (250 mL) Pineapple pieces, fresh or canned and drained
1/4 cup (60 mL) Teriyaki sauce
1 tbsp (15 mL) Sesame oil
1 tbsp (15 mL) Freshly grated ginger
2 tbsp (30 mL) Toasted sesame seeds


HEAT oil in a large skillet over medium-high. Add chicken and cook for 8-10 minutes, stirring occasionally until golden brown. Remove from the pan and set aside. Add vegetables and stir-fry for 5-6 minutes. Return the chicken to the pan and continue to cook for another 1-2 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (180°C). Add the pineapple, teriyaki sauce, sesame oil and grated ginger. Toss and cook for 1-2 minutes. Serve with rice or noodles and sprinkled with toasted sesame seeds.
