My young kids LOVE this meal. Its easy and fun. I initially called it El Pollo Loco ( crazy chicken) but the kids renamed it. I usually make this in warm weather so I can use the outdoor grill but it is also great in the oven.


6 chicken quarters
5 fresh tomatoes
1 bunch fresh cilantro
1 tsp garlic salt
1 tsp onion powder
1 tomato paste
3 tbsp olive oil
1 red onion
1 package of large Dempsters flour tortillas ( 10)
2 garlic cloves


Pre-heat oven to 425 degrees.

Place chicken leg quarters skin side up in baking dish.

Sprinkle salt and pepper over the chicken to taste.

Bake for one hour until meat is cooked through and skin is crispy and meat falls off bone. Periodically baste the quarters with the chicken drippings.

Warm Dempsters large tortillas on low setting in microwave for one minute.

Salsa recipe:
Peel and dice tomatoes and add a can of diced tomatoes to a large bowl. Drain excess liquid. Mince garlic cloves and add.. Sprinkle onion powder and garlic salt to mixture. Stir in paste and olive oil. Mince onion and add and finally add chopped cilantro. Mix well.

Now comes the fun part. Tear off tortilla pieces and use them to "pinch" off meat from the quarters. Add salsa to create a mini taco or just dip it in the salsa.This is a delicious south-of-the-border feast.
