About this Recipe

Summer screams for cold pasta salads and this recipe will not disappoint.

Ingredients

1 Pkg (65 g) Maple Leaf® Ready Crisp® Bacon Strips
1 lb elbow pasta, cooked and cooled
1 cup (250 mL) sharp cheddar cheese, grated
2 large onions, thinly sliced
2 tbsp (30 mL) butter
1 tbsp (15 mL) olive oil
Salt
Pepper
1/2 cup (125 mL) green onion, chopped
1 cup (250 mL) mayonnaise
3/4 cup (175 mL) sour cream

Directions

HEAT butter and oil in a large skillet over medium high heat.

COOK onions 6 to 8 minutes or until caramelized and browned.

SEASON with salt and pepper.

SET aside to cool.

ONCE cooled place the onions, mayonnaise and sour cream into the base of a food processor.

BLEND on high speed until smooth.

SEASON with salt and pepper.

PLACE cooked pasta in a large bowl.

POUR dressing over top.

MIX well to coat pasta.

STIR in cheddar cheese and green onions.

FOLLOW micro wave instructions for bacon.

DICE crisped bacon and stir half into pasta mixture.

GARNISH pasta salad with remaining bacon.

Notes

Serve alongside Maple Leaf® Top Dogs.
