Pesto brings a little Italian flare to your chicken and your table!


1 Maple Leaf Prime Naturally® Whole Chicken
1/4 cup (60 mL) Pesto
2 tbsp (30 mL) Butter, melted
Salt and pepper
3 Onions, divided
2 Zucchini, trimmed and sliced
2 Red peppers, seeded and sliced
2 Tomatoes, cored and quartered
1 Clove of garlic, minced
1 tsp (5 mL) Italian seasoning
2 tbsp (30 mL) Olive oil


PREHEAT oven to 375°F (190°C). RUB pesto gently under the skin of the chicken. Brush outside of the chicken with melted butter and season with salt and pepper. Peel and half 1 onion and place in the cavity of the chicken. Place chicken in a roasting pan and cook for about 1 hour. PEEL and quarter remaining 2 onions. In a large bowl mix together onion, zucchini, peppers, tomatoes, garlic, Italian seasoning and olive oil, toss to coat. Place around chicken in roasting pan, and cook for about 30 minutes or until vegetable are soft and chicken has reached the internal temperature of 185°F (85°C).
