A delicious way to start any occasion, your guests will be impressed.
|1||(350 g) Package Olivieri® Rainbow Tortellini with Cheese|
|1 cup||(80 mL) Olivieri® Garden Pesto, divided|
|2 tbsp||(30 mL) Olive oil|
|1||Yellow pepper, cut into 1” (2.5 cm) pieces|
|1||Green pepper, cut into 1” (2.5 cm) pieces|
|30 Grape tomatoes|
|1 cup||(250 mL) Mozzarella cheese, cut into ½” (1.25 cm) cubes|
|30||Pitted black olives|
|6||Pepperettes, cut into 1” (2.5 cm) pieces|
|2 tbsp||(30-45 mL) White balsamic vinegar|
COOK pasta according to package directions. Drain and rinse with cold water. Mix oil and pesto; toss ¼ cup (60 mL) with pasta.
ASSEMBLE skewers by alternating cheese, pasta, green pepper, olive, pasta, yellow pepper, tomato, pasta and pepperoni. Repeat until all of the pasta is used.
BRUSH each skewer with remaining oil and pesto and a drizzle of balsamic vinegar.
