This quick and easy sandwich combined with a side salad makes for a healthy lunch option.
|1/2 cup||(125 mL) Shredded cooked chicken|
|1 tsp||(5 mL) Pesto|
|1 tbsp||(15 mL) Mayonnaise|
|Salt and pepper|
|2||Slices Dempster’s Bakery Gluten Zero 100% Wholegrain Bread|
|1/4 cup||(60 mL) Baby arugula or spinach|
|1/2||Roasted red pepper, sliced|
|1/2 oz||oz Parmesan cheese shavings|
COMBINE chicken, pesto and mayonnaise in a small bowl. Season with salt and pepper to taste.
ASSEMBLE sandwich by placing arugula over one slice of bread, followed by chicken mixture, red pepper and Parmesan cheese shavings. Top with remaining bread.
