Fresh Italian pesto on a sandwich with creamy Mozzarella. Fresh, fun & delicious.
|6||Slices Fresh Mozzarella cheese|
|2 tbsp||(30 mL) Ready prepared pesto|
|2||Roma tomatoes, sliced|
|Pinch of chili flakes (optional)|
|4||Slices Villaggio® 100% Whole Wheat Thick Sliced Italian Style Bread, toasted|
|Salt and pepper|
|1 cup||(250 mL) Arugula|
|1 tbsp||(15 mL) Olive oil|
PLACE Mozzarella slices in a medium bowl and add pesto and chili flakes (if using).
ASSEMBLE sandwiches by placing three slices of Mozzarella cheese on two slices of toast. Top with sliced tomatoes, salt and pepper. Divide the arugula between the two, drizzle with olive oil and top with the remaining toast slices.
