Easy and impressive pesto stuffed chicken will delight even the fussiest of eaters.
|2||Maple Leaf Prime Naturally® Butterflied Chicken Breasts|
|2.5 tbsp||(37 mL) Ready prepared pesto|
|1 tbsp||(15 mL) Dijon mustard|
|Salt and pepper to taste|
PREHEAT oven to 375˚F (190˚C). Lightly coat a baking pan with cooking spray or line with parchment paper.
PLACE 1 butterflied chicken into a large re-sealable plastic bag and using a meat mallet pound chicken flat. Repeat with remaining piece.
LAY flattened chicken breasts on a clean flat work surface and season with salt and pepper. Spread a generous tablespoon of pesto over chicken and roll up, securing ends with wooden toothpicks. Place in prepared baking pan and brush with Dijon mustard.
BAKE in preheated oven for about 25 minutes or until golden brown and internal temperature has reached 170˚F (77˚C).
ALLOW chicken to rest 5 minutes. Remove toothpicks from chicken and slice into rounds before serving.
Add small amount of chopped sundried tomatoes to pesto for a different flavor profile.
Serve with side salad and rice pilaf.
